OK, so, yep, this is not really a pasta dish, because that wouldn’t be low carb at all would it? Hence me putting the word spaghetti in brackets. It’s kind of like that, and uses a bolognese, only I substituted out the pasta. Bear with me. We all know I love pasta, it’s one of the things I have found hardest to let go of. I’m not saying I’ll never eat it again, yet it won’t be one of my diet staples and in all honesty I feel so much better for that. However…I miss recipes like THIS ONE. Baked spaghetti is bloody lovely and it got me thinking that the only thing in that recipe I can’t actually eat is the spaghetti, so why not make it anyway?! This is EASY. Here’s what you do…
- Make the bolognese as per this recipe HERE (or however you prefer to make it)
- Make the courgette/zucchini noodles as per this recipe HERE
- Do to the courgette noodles what you would have done to the spaghetti in the ORIGINAL RECIPE
- Then either bake in the oven with cheese on top or serve like regular spaghetti because you’re too hungry to wait!
